Grilled Corn with Sriracha Aioli

Whole Grilled Corn with spicy sriracha aioli

There are few things better than sweet summer corn.  This one is so pretty, but it’s the combination of that perfectly sweet and spicy bite that has everyone begging for more!


Ingredients

8 ears corn, in husks
¼ cup olive oil
1 cup mayonnaise 
3 tablespoons sriracha 
1 clove garlic, finely grated
2 tablespoons lemon or lime juice
2 tablespoons minced fresh parsley, for garnish
Maldon salt, for garnish
1 lime, to serve 


Preparation

Peel back corn husks, but leave attached at the stem. Remove silk, then brush corn with olive oil.  Pull husks back and secure with butcher's twine, tying a small loose knot to keep in place. Place corn near the side of the grill, so the husk sits off the grill. Grill until slightly charred or until desired doneness. 

In a small bowl, combine mayonnaise, sriracha, garlic, and lemon juice. Mix to combine.

To serve, drizzle corn with sriracha aioli and sprinkle with fresh parsley and Maldon salt. Serve with lime wedges.
