Grilled Vegetables
I’m all about clean, simple ingredients and lots of colorful vegetables. Summer is all about grilling outside, so take that beautiful produce and throw it on the grill. No need to get your kitchen dirty!
Ingredients
Radishes
Red onions
Scallions
Cherry tomatoes, on the vine
Shishito peppers
Olive oil, as needed
Pink Himalayan salt, to taste
Freshly chopped parsley
Maldon salt
Preparation
Preheat grill to high heat.
To prepare, slice radishes in half, and red onions in quarters. Wash scallions and shishito peppers and leave whole. Keep tomatoes on the vine.
Brush vegetables with olive oil and pink Himalayan salt. Grill for 5-8 minutes, or until desired doneness.
Before serving, sprinkle with Maldon salt and chopped parsley.
