There are a myriad of benefits to cooking with seasonal ingredients, but simply put, it just tastes better! They are the freshest you’ll ever find, with the full flavor intact. It’s also the healthier choice. Juicy tomatoes plucked from the vine at peak ripeness in July will be packed with nutrients and goodness.  This fresh salad is simple but elegant, perfect for a summertime BBQ!


Ingredients

6-8 heirloom tomatoes 
¼ cup chopped dill
¼ cup chopped basil
¼ cup chopped  mint
1 tablespoon very finely diced red onion or shallot
¼ cup chopped pistachios  
2-3 tablespoons extra virgin olive oil
Zest of ½  lemon 
Maldon salt, to taste


Preparation

Slice heirloom tomatoes and spread out on a large platter.

Sprinkle with dill, basil, mint, red onion, and pistachios.

Drizzle with olive oil, and finish with a sprinkle of lemon zest and Maldon salt.
