My Mama’s Zucchini Quiche

Every holiday has that nostalgic dish your mum pulls out that becomes synonymous with that chag. It becomes a part of the woven thread of childhood memories, so reminiscent that one bite takes you back. My Mother makes this every year, and it wouldn't be shavuot without it!


Ingredients

Pre-baked mini pie shell 
375 g zucchini sliced thin (4-5 small)
2 tablespoons butter
1 tablespoon chopped shallot 
¾ milk
¼ cup grated cheese 
½ tablespoons cold butter diced 
3 eggs
Sprinkle with parm 
salt
pepper
nutmeg


Preparation

  1. Prepare pie shell according to directions and allow to cool.

  2. Pre heat oven to 350F.

  3. Melt butter in skillet over low heat, add shallot and sautee until transparent. Add thinly sliced zucchini, salt pepper and nutmeg. Cook for 10 minutes. 

  4. In small bowl beat eggs lightly and add milk until equals 1.5 cups liquid.

  5. Combine zucchini and egg mixture in medium bowl. Add grated cheese and transfer to pre baked pie shell. Scatter dice butter on top and sprinkle with parm. Bake until golden brown approx 30 mins.
