When it comes to soups, it’s all about layering and building up the flavors, to achieve a hearty soup with a lot of depth. Always start by sweating your aromatics, and then your vegetables. Sweating over very low heat allows you to extract the most natural flavor and allows the vegetables to release all that delicious liquid, so by the time you add water, you don’t need as much of it, and your flavors don’t get diluted. Don’t forget to sprinkle vegetables with a little salt at every stage to helps extract flavor and moisture. Lastly, don’t boil, keep on low flame and simmer, simmer, simmer.
